I was recently installing Devstack and it usually takes around 45 minutes for the whole process to complete. I actually needed only some of the services. Is there a way where in we can select what we want to install ?

You use the clauses enable_service and disable_service, or you initialize the ENABLED_SERVICES variable with the components you want. Example from http://docs.openstack.org/developer/d...:

disable_service mysql
enable_service postgresql

Or from http://docs.openstack.org/developer/d...:

ENABLED_SERVICES=n-cpu,rabbit,q-agt

Another opportunity to make the process faster: Devstack can download VM images, which takes a number of minutes. Look for IMAGE_URLS in your local.conf and cut it down if necessary.
