What vanilla openstack generally refer to ? the Installation document i got from openstack website installs vanilla openstack ?

Vanilla, being the plainest form of ice-cream, generally refers to OpenStack without any "special" modifications.

OpenStack is designed to be configured to support your use case and has many projects to choose from, so there is no one "vanilla OpenStack". However, as you've noted - installations using the guides at http://docs.openstack.org/ are a good candidate for "vanilla OpenStack".
