Barbican call GET /v1/secrets/{uuid} will retrieve a secret’s metadata. How can I determine the type of secret returned (i.e, if it is a Symmetric key, or Public key, or Private key etc.) from that call?

In the response there is a parameter called secret_type which tells the type of the secret returned. For eg. secret_type = symmetric tells that it is a symmetric key.
