Can anyone suggest a configuration I can use here?

I have 3 physical hosts, each with one single NIC. They are running CentOS6.7.

I have no choice in hardware or OS.

How can I get OpenStack up and running?

As per you hardware config you need to go for nova network. you have to assign IP addresses to the bridge itself, and not to the physical interface. check following site for more info http://serverfault.com/questions/437248/openstack-connectivity-between-instances-on-2-separate-nodes (http://serverfault.com/questions/4372...)

Use the Icehouse install guide, but configure only one network instead of three. With the upcoming release of Liberty, though, the Icehouse guide might disappear soon.

Juno requires Centos/Redhat 7.

Single NIC will cause network congestion , specially on Network Node , where you would have create alias to attach to external Network , either (Controller/Network) +2 x (Compute ).
I would suggest upgrade OS to 7.1, what ever it takes.
http://isoredirect.centos.org/centos/.... It won't cost your company any cent.
RDO Liberty (RC) is running fine on CentOS 7.1 boxes just fine right now. On 10/21/2015 it will go GA.
