In many different OpenStack components, documentation refers to endpoints. Networking, API, and Keystone endpoints are discussed everywhere. What exactly is the definition of an endpoint in the context of OpenStack?

An endpoint is a network point where you have a service in the openstack environment. For example, you may have image service at the "controller" node at the port 9292, so the endpoint is the address where the service is running and waiting for requests. In this example the endpoint will be http://controller:9292

It's a mapping from service to URI through which those service's APIs can be used.
