I have a few instances running on openstack. I wanted to know if there was a way to reboot them into a different flavor with more memory without going through setting up the instance again.

I believe the mechanism you're looking for is called 'resizing' and you should be able to do it through the dashboard or the command line.

http://docs.openstack.org/user-guide/content/nova_cli_resize.html has more instructions.
