If you want to see all the database tables of nova, you can log in to mysql using mysql -u <username> -p and then entering your mysql password and then in nova database(use use nova to use nova database) do show tables to list all tables of nova.

I am not sure if there is an easier way to do this and I am not aware of any documentation which gives the table design of nova, may be you could ask this on the mailing-list: openstack@lists.openstack.org .

If you want to explore the tables, using a graphical client might help to get a better grip of relations. Check out MySQL Workbench. It is available for most operating systems.
