I see many Blue Chip companies slowly sneaking into Opensource arena with the curiosity and interest of helping however making their own proprietary bundled softwares to market their customized packages. Do we have any check, legality or check to stop this? I also see Eneterprise versions completely depending on the next Openstack versions to market with theor logo and licenses making it proprietary.

Having a rich commercial ecosystem around OpenStack is one of the objectives of the OpenStack Foundation. What you're highlighting is not seen as a problem but as a success of OpenStack as a project. You can still run OpenStack directly from source code, as the project promised to do since its beginning. And you have the possibility to choose from the marketplace a commercial vendor to help you with your OpenStack deployments.
