It depends with which parts of OpenStack you want to use Ceph. A few suggestions:

Install a Ceph-based volume driver https://docs.openstack.org/cinder/lat...

Ceph as image backend https://docs.openstack.org/ocata/conf...

Ceph in Kolla https://docs.openstack.org/kolla-ansi...

Ceph as Manila backend https://docs.openstack.org/manila/oca...

Ceph in Tripleo https://docs.openstack.org/tripleo-do...

I don't think that anything has changed from version to version. I was just too lazy to find the latest document each time.

I only know Helion OpenStack, where Ceph is configured with Ansible playbooks. I have no experience manually integrating it, but it should be straightforward in most cases.
