openstack recordset create --records '20 mx2.mxserver.xyz.' --type MX domain.xyz. domain.xyz.

Yeap - each recordset has multiple records.

Newer versions of the client will allow multiple "--record" flags as well, e.g.:

openstack recordset create --record '10 mx.mxserver.xyz.' --record '20 mx2.mxserver.xyz.' --type MX domain.xyz. domain.xyz.

which should make it clearer
