You can use the IP address, but controller seems to be less error-prone. Of course there needs to be name resolution for controller, usually by adding it to /etc/hosts. And of course, you can call it something else than controller.

You need to refer to the controller in other places, for example for message queue configuration on the compute node. There, localhost won't work.

When you follow the installation tutorials, the address of the GUI is the address of the control node. If you set up an HA config with several control nodes and a load balancer, it would be the VIP of the load balancer.
